For The Love Of Rum

The ninth edition of the Barbados food & Rum festival kicks off this week with an official launch Night out at Oistins Fish Market. You can expect gastronomic experiences to stimulate your senses all week ending on Sunday 21st with a Beach party at the Hilton Resort, and the drink of choice? Rum of course!

In the spirit of the week to come, Yiga! Director Jaslyn Hall went to Fusion Restaurant, rooftop, Limegrove Centre, St James, to order a bespoke yiga! cocktail from Barbados’s Number 1 mixologist Philip ‘Casanova’ Antoine, he created a fresh, stylish, Caribbean cocktail that matches our yiga! brand perfectly – over to Philip.

“In terms of the creation of the cocktail a couple of things come to mind, obviously this is Barbados and the Caribbean so the spirit of my choice would be rum for sure, and in this cocktail I’ll use white rum. The colour of the yiga! brand reminds me of the ocean, and the wonderful skies here in Barbados, so for that ocean inspired colour I would go with light and fresh ingredients. To create the colour I would use a blue curacao, then to make that turquoise colour, I would add pineapple juice, then I would have to lighten it, with coconut water, it would be nice and light and refreshing, add some mint leaves, that would add a tropical note to it, and some coconut essence for that Caribbean aroma, a dash of simple syrup and for the citrus, I’ll add lime juice.

There’s nothing that will compliment the turquoise as sexy as foam, I’ll use egg white foam on the top to represent the ocean, the breaking of the waves and garnish with some mango pearls to represent sunshine. . Lets call it a yiga! Caribbean Dream”.

So said, So done, I sat in the everso elegant lounge of Fusion Rooftop, eating truffle popcorn and sipping and dreaming. Definitely try this at home. We’ll post the Philip’s how to video on our Facebook page @getyiga. Tell us what you think? Delicious right?

About Philip “Casanova” Antoine: Resident Mixologist & Bar Manager at Fusion Rooftop

Philip is recognized as one of the top Bartenders/ mixologists on the island with in the Caribbean and on the international stage.

Interestingly, bartending was not his first choice for a career. He is actually certified in Interior Design and decorating, his introduction to the world of bartending came in 2006, while after frequenting what was then the island’s number one night club was given a job as a bartender in the club, this opened his eyes to bartending. After the closure of the club he moved on to the world famous “T.G.I. FRIDAYS” restaurant. Having enjoyed two years of fun and cocktails at “FRIDAYS”, he ventured off to spread his wings as a mixologist.

This year he captured the Pepsi Best Beverage award at the annual Embassy Chef challenge held in Washington D.C. a title which makes him the Embassy Chef challenge bartender of the year 2018 emerging from a field of 40 entrants. Shortly after winning that competition he won The C.T.O Rum & Rhythm 2018 Mixologist of the year award.

Ambitious, confident and hard working with a unique style, flair and a keen drive to become one of the best in the world Philip “Casanova” Antoine is definitely one who continues take Barbados and The Caribbean on the international stage, showing the vast talents and creativity the Caribbean has to offer.

This month he launched his own personal brand Casanova Liquid Artistry with aims to showcase his own art of bartending, travel the world and inspire the youth of the Caribbean to follow their own dreams.
